Pull out the slow cooker and your dutch oven! The summer heat is slowly saying goodbye and the cooler months are coming. When there is even the faintest cool breeze outside, I’m in the mood for soup. There is nothing like cooler weather to revitalize the meal planning funk I get into by the end of summer. Below you will find some of my family’s favorite soup recipes.
Texan Frito Pie
My husband introduced this no-bean chili recipe to me a few years ago and now it’s a staple in our house in the fall. We take a camping trip every October to Lake Guntersville State Park and I always make a double batch of this. We serve it with Fritos, of course! But, it’s also delicious alongside this pimento cheese cornbread, which is a recipe from a Birmingham local, Family Savvy. In my house we call it “The Cornbread” because it trumps all other cornbreads.
Crockpot Chicken Noodle Soup
This chicken noodle soup recipe from Damn Delicious is, well, damn delicious. Not to mention, it’s super easy too! If you have a sick child at home or just need a comforting bowl of soup, let your slow cooker do the hard work for you. Pro-tip: don’t let the noodles sit too long in the slow cooker before you eat. The recipe says to only have them for the last 30-40 minutes of overall cooking time, because they will get mushy if you do otherwise! This recipe is freezer friendly too, just hold the noodles if that is your plan.
The Best Browned Beef Stew
It really is the best. A friend of mine made this beef stew for me years ago when my husband was out of town, and I’m still not over how tasty it is. Making this stew is a bit of a labor of love. It’s at least a two hour cooking event, so plan accordingly. This is not something to whip up at the end of a long work day! But, it would be perfect for leftovers on those nights. I like to serve this with Pioneer Woman’s The Bread.
White Chicken Chili
This chili recipe is from Bri McKoy. I love the addition of plain Greek yogurt in place of sour cream. And the heavy whipping cream?! Chef’s Kiss! You can totally just use a shredded rotisserie chicken, too! Make it as easy on yourself as possible. This is also perfect when served alongside the aforementioned pimento cheese cornbread.

Chicken Corn Chowder
This recipe is from another Birmingham local, The Peachie Spoon. This recipe could not be easier. You literally dump everything into your slow cooker and go about your merry day, then come home and eat. It’s the perfect soup at the end of a long day!
